You feel it in the air… summer’s finally upon us! And, you know what that means—summer fun with strawberries and lots of locally-grown fruits and vegetables! We love creating treats with fresh strawberries because they are so sweet, light, and juicy. In New England, peak strawberry harvest season is in June and July, so now is prime time to have fun this summer eating and enjoying strawberries!
Beyond strawberries’ sweet taste, they are chock full of nutrients, including:
- Vitamin C, manganese, folate (vitamin B9), and potassium
- Antioxidants (good for heart health and blood sugar control!)
- High in fiber
So feel free to indulge in this fun, delicious summer treat!

Chocolate Covered Strawberries
1 pound strawberries (as large as you can find with stems!)
6 ounces semisweet chocolate chips (or whatever chocolate you prefer)
Optional: sprinkles, crushed candy ,or chopped nuts)
First, melt chocolate by placing it in a heatproof bowl over a pot of boiling water, or in the microwave. (If using microwave, place on low power for one minute, stir, and place back in for another minute). While the chocolate is melting, line a sheet pan with parchment paper. Holding the strawberries by the stem, dip berries into chocolate and lay on the parchment paper. After that, add sprinkles or any other desired toppings while the chocolate is still warm!
